Does anyone know how I can use the colemak mapping to type traditional/simplified chinese on a Mac?
I know you can do this with Koeteri, but chinese doesn't seem to have a similar option.

I have a similar problem... I have a great Colemak keyboard, but when I want to type in Korean it assumes that it is a QWERTY layout. I am using Linux, most of my text editing is done in emacs. How do I solve this?
I have no idea. On Windows, the IME is separate from the layout itself I think, or at the least you can use EPKL with them. Looks like they pulled a trick for Linux, but I don't know enough about Linux IMEs.
